John joined our crew today on a last day of canning for the year of almost 50 more quarts of apple pie filling! With the abundance of apples this year... we thought we would add to our 85 from 3 weeks ago.
John reports that Bobbi loves our pie filling and so they would love to have more added to the larder for the next few years. We cannot count on apples next year so our 130 quarts will have to last likely 2 years at least. I took a couple jars to my mom and she is already using them in pies for some company this weekend! Our 7 families love our pie filling for pies and our famous apple kuchen!
Some asked for the recipe last time and it is fresh on my mind so I will add it here...
Wilderness Apple Pie filling
6 quarts apples
8 cups water bring to a boil
add 4 1/2 cups of sugar mixed with 1 cup corn starch and 2 teaspoons cinnamon and one tbsp salt when dry and whisk into the hot water, add 2 tablespoons lemon juice. When the sauce gets somewhat thick, I turn off the burner and add the apples. The apples don't really have to cook but just heat through in the hot sauce. When mixed well put into jars, and process 20 min in hot water bath.
Making food for our 7 families is our delight!
My day is gone and I am back on the farm as Ruth and Paul are out baling corn stalks. Ruth ahead raking and Paul following baling. Tensions are high so I am happy to be bathing little girls and getting them dressed pretty and doing their hair... My happy place! Compared to the work around equipment outside. Ruth enjoys being out there, so who am I to stand in her way!
There is much in the readings today from St Paul and from Jesus... Paul speaks of The Church is the Body of Christ and He is the head, but so much more... the Spirit is what gives The Church/His Body the LIFE/LOVE/LIGHT or animates and fills our hearts, minds and souls with his graces and blessings and hopefully on the LIFE eternal!
Thanks John and Simon for putting the apples through your core peeler machines! It is kind of sad to think that this is probably our last big canning day for the year.

Jesus, it has been a day full of living the life with Ruth and her family of what I had with my kids.... passing on our family jobs and making food for our 7 families. It is a gift to have family bringing me back to my nest years! How I love to share our Faith/Family/Farm. Bless-bless, Barb
